  1. To make chicken: Clean the chicken well with salt. Transfer the chicken to a plate and pat dry with paper towel.
  2. Season the chicken with salt. Stuff the chicken cavity with the fresh ginger slices and scallions. Place the chicken in stock pot, and then add 1 inch water. Add salt to your taste.
  3. boil the water over medium heat. Then reduce the heat to low. Cover and cook for 30 minutes. When the chicken is cooked, turn off the flame.
  4. Remove the chicken from the stockpot, and transfer to an ice bath for 5 minutes and to keep the chicken skin springy. Discard the scallion and ginger. Dried the chicken and rub it all over with oil. Carve the chicken for serving.
  5. For make rice: heat the oil in skillet. Add chopped chicken fat, add the ginger, garlic. Add 1 teaspoon salt. Fry for 10 minutes. Add the rice. Cook for 3 minutes. move the rice to a rice cooker and add reserved poaching broth. Steam the rice for 60 minutes.
  6. To make the ginger-garlic sauce: in bowl mix together oil, garlic, and ginger, salt and rice vinegar.
  7. To make the soy sauce: heat the water in saucepan then add the sugar. When the sugar is melt, add the soy sauce. Stir for mix and then remove from the heat.
  8. To make chili sauce: in a bowl mix together sugar, garlic, ginger chicken broth, sriracha and sambal.
  9. Serve the sliced chicken with the rice, sauces, cucumbers, and cilantro. Enjoy!
